Protein Packed Chicken Pot Pie Soup!!

Craving Comfort food?! Enjoy this protein packed comforting soup, guilt free!


What you'll need:

  • 5 chicken breasts

  • 2-3 32 oz Chicken bone broth

  • 2 parsnips

  • 2 white potatoes

  • 1 package celery

  • 1 package carrots (I like my soups full of veggies :), can use more or less as desired)

  • 1/2 package frozen peas

  • 1/2 package frozen corn (if desired)

  • 1 yellow onion

  • 3 garlic cloves

  • 2 cups almond milk

  • 2 T corn starch

  • 3 T almond flour

  • 1 tsp thyme

  • 1 tsp poultry seasoning

  • salt & pepper to taste

  • garlic salt, paprika, poultry seasoning to season chicken

How to make:

  1. Prepare chicken breasts with garlic salt, paprika and poultry seasoning. Bake. Shred. Cube instead of shred, if desired.

  2. Dice all veggies.

  3. Sautee garlic and onion, add potatoes and parsnips.

  4. Add bone broth (add as much as or as little as you prefer, the less you add, the thicker the soup will be, the more you add the more "soupy" the soup will be + more protein!), simmer until potatoes and parsnips soften slightly, add carrots and celery and simmer until all veggies are tender, adding frozen last as they won't take long to thaw.

  5. Add corn starch, almond flour and seasonings to the almond milk. Pour into soup.

  6. Add chicken and simmer for about 5-10 minutes, until all ingredients are combined.

  7. Enjoy!
